  1. Cut up the cucumber into small pieces and season with salt.
  2. Let sit for 10–15 minutes and then squeeze out the liquid.
  3. Mix yoghurt and oil. Stir for a while to make it blend (or use a stick blender).
  4. Add garlic, cucumber and salt. Add lemon and pepper to taste. Let tzatziki rest in fridge for a few hours.
