Ingredients
100
grams
cream cheese
4
large
eggs
1/2
tsp
cinnamon
1
tsp
xylitol
if some sweetness is wanted – I leave it out
Instructions
Put all ingredients in a blender, or mix with a wand blender until smooth.
Heat up a non-stick frying pan and melt a knob of butter in it.
Pour in batter to make the size of pancake you’d like – or, even make pikelet sized.
Flip over when bubbles rise to the surface.
Cook quickly on the other side. (Not too long, or it’ll burn).
Repeat until all of the batter is gone.
Serve with a squeeze of lemon juice and some pure cream, or with some beautiful berry compote!
