Spinach & Zucchini Burgers

Ingredients
  

  • 160 g cooked spinach
  • 1 medium zucchini grated, approx 200g
  • 1/4 cup onion, red diced
  • 1/4 cup almond flour
  • 1 medium eggs
  • 60 grams cheese grated eg gouda
  • 1 cloves garlic minced
  • 1/4 tsp red pepper flakes
  • 1/4 tsp onion powder
  • butter for cooking
  • 1 tsp salt
  • 1 tsp pepper

Method
 

  1. If you are using fresh spinach, chop it up and cook for a few minutes until wilted. Allow to cool.
  2. Squeeze out the excess moisture from the spinach and the grated zucchini - add them to a strainer, sprinkle with a bit of salt (this draws out the moisture) and let it sit in the sink for a bit. If you are rushed for time, you could press down on the veggies with paper towel to get the liquid out.
  3. Transfer to a bowl and add the remaining ingredients. Mix well.
  4. Preheat BBQ or frying pan to medium heat, and melt butter
  5. Form 4 patties and cook burgers for about 7-8 minutes on each side.
  6. Remove from heat and add your favourite burger toppings. Serve with Keto Buns if desired
