- 600 g Sirloin steak
- 100 g butter
- 30 ml cream
- 300 grams cauliflower
- 1 tsp rock salt
- 1/2 tsp black pepper

- While the cauliflower is steaming, cook the steak to your preference.
- Steam cauliflower until tender. Drain and then return to pan. (For a less runny mash, remove excess water from cauliflower with a cheesecloth).
- Add butter and cream and mash until smooth. You may need more or less cream depending on your preference. Add the butter first, then add the cream to get the desired consistency.
- Add salt and pepper to taste.
If you're using cauliflower, use a stick blender to get the cauliflower to a smooth consistency. A hand held masher will not achieve this.
