Instructions
  1. Preheat the oven to 180C
  2. Peel and thinly slice potatoes and sweet potato. If you are short on time, steam the potatoes before putting them into the oven.
  3. Put the potato, onion, garlic and bacon into a rectangular baking dish.
  4. Cover the potato mixture with cream (300g may be too much or not enough - the trick is not using too much as it makes the bake quite runny).
  5. Cover the potatoes with a generous serving of grated cheese
  6. If you have not cooked the potato, put the lid on the crock pot and cook for 60-90 minutes or until the potato is soft. If the potato is cooked, it will only need approximately 20 minutes.
Recipe Notes

To lower the carbohydrate content, simply swap the potato and sweet potato for low carb veggies such as cauliflower, broccoli, pumpkin, eggplant or zucchini.
