Ingredients

cauliflower florets

milk

vegetable stock

tbsp
arrowroot flour
or any flour that will thicken the sauce

egg
beaten

cheese
eg cheddar
Salt and pepper
to taste
Instructions
Preheat oven to 175C
Salt the cauliflower then steam until soft
Place the florets in a greased baking dish
Heat up the milk in a saucepan with a pinch of salt and pepper over medium heat
Add the stock and flour keep stirring – bring to the boil
Remove the sauce from heat, then whisk in the egg
Pour the thickened sauce over the cauliflower
Add the cheese evenly, then bake for 35-40 minutes
Put under the grill for 3-5 minutes to get a nice colour on top
