- 5 cups cauliflower florets
- 250 ml milk
- 1/2 cup vegetable stock
- 2 tbsp arrowroot flour or any flour that will thicken the sauce
- 1 egg beaten
- 200 g cheese eg cheddar
- Salt and pepper to taste

- Preheat oven to 175C
- Salt the cauliflower then steam until soft
- Place the florets in a greased baking dish
- Heat up the milk in a saucepan with a pinch of salt and pepper over medium heat
- Add the stock and flour keep stirring - bring to the boil
- Remove the sauce from heat, then whisk in the egg
- Pour the thickened sauce over the cauliflower
- Add the cheese evenly, then bake for 35-40 minutes
- Put under the grill for 3-5 minutes to get a nice colour on top
