- 100 grams cream cheese
- 4 large eggs
- 1/2 tsp cinnamon
- 1 tsp xylitol if some sweetness is wanted – I leave it out
Ingredients

- Put all ingredients in a blender, or mix with a wand blender until smooth.
- Heat up a non-stick frying pan and melt a knob of butter in it.
- Pour in batter to make the size of pancake you’d like – or, even make pikelet sized.
- Flip over when bubbles rise to the surface.
- Cook quickly on the other side. (Not too long, or it’ll burn).
- Repeat until all of the batter is gone.
- Serve with a squeeze of lemon juice and some pure cream, or with some beautiful berry compote!
