- 80 grams chia seeds
- 125 ml water
- 125 ml coconut cream
- 1/2 tsp nutmeg
- 1 tsp cinnamon
- 1 tsp vanilla essence
- 1/2 tsp xylitol more or less to taste
- 1/2 cup protein powder you can use a naturally flavoured vanilla protein powder instead of plain protein powder

- In a large bowl, mix together the chia seeds, nutmeg & cinnamon.
- Slowly pour in the water and mix gradually
- Stir in vanilla essence & coconut cream, making sure there are no clumps of chia seeds!
- Add xylitol to taste
- Pour into a single airtight container or put into 4 individual containers and put in the fridge to set. (Between 2-4 hours).
- Keep checking the mix to make sure it isn’t too thick – if it is, either add more water or coconut cream, depending on how rich you’d like it to be!
- To serve: Enjoy as is or spoon into a low-ball glass, or jar and top with greek yoghurt, berries or your favourite granola!
You can add mixed berries to puddings but reduce the water content by about half
Full cream milk or a nut milk can be used instead of coconut milk.
