- 4 medium jacket potatoes
- 200 ml sour cream full fat
- 120 grams cheese grated
- 1 shallot thinly sliced
- 120 g bacon diced
- butter to taste

- Cover the jacket potatoes in aluminium foil and place into a pre-heated oven (180 degrees Celsius) for 20-30 minutes or until they are completely cooked through and soft
- While the potatoes are cooking, cook the bacon for a few minutes, grate the cheese and thinly slice the shallots
- Once the potatoes are cooked cut into quarters (not the whole way through) and fill with butter, sour cream, cheese, shallots and bacon.
You can use any topping you like with this recipe and to make this vegetarian, leave out the bacon and add hemp seeds.
