- 2 large avocados
- 4 large eggs
- 4 tbsp sour cream
- 30 grams chives finely chopped
- 1 tsp Salt
- 1/2 tsp Pepper
- 1/2 tsp chilli flakes
Ingredients

- Preheat oven to 180 degrees Celsius.
- Cut avocados in half, lengthways.
- Remove seeds
- Scoop out a small amount of the avocado flesh and place halves in a baking tray, skin down.
- Mix cream, chives, salt and pepper and scoop a spoonful into the hollow of each avocado half.
- Crack an egg into each half and top with chilli flakes or paprika.
- Bake in a oven for 15-20 minutes.
Notes: For a non-vegetarian option, finely dice some organic bacon and include in the cream mix before adding the egg. Cooking time remains the same.
