Ingredients

  • 80 grams chia seeds
  • 125 ml water
  • 125 ml coconut cream
  • 1/2 tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp vanilla essence
  • 1/2 tsp xylitol more or less to taste
  • 1/2 cup protein powder you can use a naturally flavoured vanilla protein powder instead of plain protein powder

Method

  1. In a large bowl, mix together the chia seeds, nutmeg & cinnamon.
  2. Slowly pour in the water and mix gradually
  3. Stir in vanilla essence & coconut cream, making sure there are no clumps of chia seeds!
  4. Add xylitol to taste
  5. Pour into a single airtight container or put into 4 individual containers and put in the fridge to set. (Between 2-4 hours).
  6. Keep checking the mix to make sure it isn’t too thick – if it is, either add more water or coconut cream, depending on how rich you’d like it to be!
  7. To serve: Enjoy as is or spoon into a low-ball glass, or jar and top with greek yoghurt, berries or your favourite granola!
